APPOINTMENT REQUIREMENTS: NQF level 3 (ABET level 4)
MINIMUM RELEVANT EXPERIENCE: 3 – 5 years’ food service experience
KNOWLEDGE AND SKILS REQUIRED: Food and Hospitality industry norms; Hospital food service systems; different types of patient diets; basic nutrition; supervisory skills; communication skills; numeric skills; computer skills
KEY PERFORMANCE AREAS
Supervise staff in food production and serving of meals, and safeguard stock and component resources, ensuring that they are cost-effectively and efficiently utilized.
Supervise food production and serving of all meals
Knowledge of menus and specifications
Knowledge of different diets
Supervising the actual meal preparation
Assist at issuing times and at dishing up times
Provide on-the-job training on preparation methods keeping with current food service standards.
Ensure that all stock/ equipment /uniform is kept secure
Perform Supervisory tasks to food service personnel during the food production and when serving customers.
Keep time record/ register to control absenteeism
Monitor performance EPMDS
Organize and train staff where necessary and record
Attend to staff needs that are work-related
Draw up the roaster and leave for best utilization of staff
Take disciplinary actions when necessary
Ensure that the storage area well managed
Ensure that stock consumption balances with costings
Do stock take on agreed times
Maintain strict access to storage areas to secure stock at all times.
Hygiene and Health and safety is maintained in the foodservice department
Ensure that the floors, walls, and the entire unit are cleaned
Coach staff on the correct usage of cleaning materials
Maintain food safety in cold chains by monitoring and recording temperature.
Ensure that all staff adheres to the personal hygiene
Compile the cleaning schedule and ensure that it is followed.
Control the best use of equipment and stores allocated to the dept.
Place and receiving orders from suppliers and stores where delegation is specified
